Do all lobsters turn red?
The color of most lobsters is a dark greenish brown, although several other shades have been reported, including blue, black, yellow, and white. However, no matter what color they are in the tank, most lobsters turn red after being cooked.
Should you eat the tomalley? A lobster’s tomalley functions as its liver and pancreas, secreting enzymes that help digest food. Although the tomalley is considered a delicacy, some experts caution against eating it because it absorbs pollutants ingested by the lobster.
Should you eat the scary red stuff sometimes found scattered on the meat? Sure. The small red particles found in the tail meat of a female lobster are its unfertilized eggs, also called roe or coral. Think of it as Down East caviar.Should the rubber bands around their claws be removed before cooking? Yes. Most experts claim the bands leave a foul taste on the lobster meat. The bands can be safely removed by placing the lobster in cold water or a refrigerator for a few minutes before cooking. The cold temperature numbs the lobster, making it easy to handle. By the way, the primary reason their claws are banded is to keep lobsters that are placed closely together from attacking each other.
But what do you do if a lobster grabs your finger? Don’t scream. And don’t dangle the lobster in the air – it will panic and tighten its grip. Instead, try to calm the lobster by placing your free hand underneath its body to support it, or set the lobster on the floor. Even better place the lobster in a holding tank or pail of water, if available. As soon as it feels that it can escape, it should let you go.Do lobsters eat with their claws? No. Lobsters hunt with their claws, using them to capture and crush their prey. They then use their legs to pass the food to their mouthparts, where it is torn apart and tasted, then swallowed into the stomach. Inside a lobster’s stomach the meat is chewed up by two sets of teeth.
